In the bowl of a stand mixer mix the bacon and cheese. Add the egg and mix on low just until incorporated.
Add the flour and mix until all together and a cohesive, sticky dough. IF it's too dry, add water a teaspoon at a time until you get a good dough.
Preheat oven to 350℉ / 175℃
Liberally flour a working surface with all-purpose or whole wheat flour. Flatten the batter to ¼-inch thick and cut into desire shapes, gathering scraps and re-flattening the dough as needed. Arrange biscuits on a parchment-lined baking sheet. Depending on which size cookie cutter you use, should be able to get 30-50 biscuits.
Bake for 20 minutes, turning half-way through. Should be kinda pale as oat flour isn't a real browning kinda flour.
Remove to a cooling rack and cool completely.
