Banana Bread
A good way to use up those bananas that you forgot about.

Ingredients

unsalted butter, softened
(1 stick, ½ cup)

large ripe bananas

large eggs

teaspoon
vanilla extract

all purpose flour

granulated sugar

baking soda

teaspoon
salt

teaspoon
cinnamon
Instructions
Preheat oven to 350°F.
Spray loaf pan with cooking spray and set aside
In the bowl of a stand mixer or a large bowl add the butter and bananas and mix/mash until smooth.
Add the eggs and vanilla and incorporate.
In another bowl, add flour, sugar, soda, salt and cinnamon and mix to combine.
With mixer running add the dry mixture to the wet mixture a large spoon at a time until all added and incorporated.
Pour batter into prepared loaf pan.
Bake for 40-55 minutes until a toothpick inserted in the middle comes out clean.
Notes
You could add 170 grams (1 cup) of chocolate chips to this. Or add some and sprinkle the rest on top before baking. Just saying.
