Lemon Bars
Tart and sweet
Ingredients
Crust

butter, salted, room temperature

all-purpose flour

powdered sugar

vanilla

Filling

granulated sugar

cup
fresh lemon juice

tablespoon
lemon zest

egg yolk

all-purpose flour
powdered sugar
Instructions
Prep
Preheat oven to 350°F
Spray an 8" x 8" or 9" x 9" baking dish with cooking spray.
Shortbread Crust
Mix flour, butter, powdered sugar, and vanilla together until a cohesive, slightly crumbly dough forms.
Press dough evenly into the prepared pan. Prick all over with a fork. Bake 12-15 minutes or until edges are just getting brown.
Filling
Whisk together eggs and egg yolk. Whisk in sugar and flour. Add lemon juice and lemon zest. Whisk vigorously for 2-3 minutes.
Pour over the hot crust just after baking.
Bake 20-25 minutes or until set and the top has a white, sugary crust.
Cool completely before cutting.
Dust top with powdered sugar.
Cut into 16 "bars."
Notes
To cut, dip a sharp knife into very hot water and run around the edge.
