Moretum
A garlicky, herby, cheese spread.
- 1 head garlic, cloves removed and peeled (or more)
- 1 bunch Italian parsley
- 1 bunch cilantro, leaves
- 2 teaspoons dried oregano
- 1½ teaspoons salt
- 1 tablespoon dried basil (or 4-5 good sized leaves of fresh)
- 12 ounces white, soft cheese (ricotta, sheep's, cotija -- feta might be interesting)
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
Try to get rid of the big stems and stick with mostly the leaves of the parsley and cilantro -- I just find that the thicker stems tend to be bitter where the smaller ones near the leaves are tastier.
Rough chop the garlic and herbs and add to a food processor. Add the salt. Blend until finely chopped.
Add the dried herbs and cheese (in the comments let me know what cheese you used) and pulse until well-blended and smooth. Add the olive oil and vinegar and blend.
Taste and adjust seasoning.
Serve with bread. Don't plan on being around anyone for awhile.
