Place oven racks at the top two positions
Put a sheet pan of water or ice on the 2nd from top position, this is to create steam.
In a large bowl mix the eggs then add the water, then add the rest of the ingredients and mix well. AS NOTED: My ingredients may not be your ingredients. Make these your own.
Let set and meld for 10 minutes while the oven heats.
Heat oven to 350°F (175°C)
If using a 12-spot muffin tin, spray liberally with cooking spray. If using silicon free-standing muffin cups (see picture), just use.
Pour the mixture into each muffin spot evenly. They should fill each spot about ½-⅔ of the way up, and that's fine -- these will expand when baking.
Bake on the top rack (above the steam rack) for 10 minutes. Then rotate and cook another 8-10 minutes. If not set after 20 minutes, cook an additional 3 minutes. They should be at least 150°F in the middle.
Remove from the oven and enjoy or freeze.
