Muffin Egg Bites

These are frittatas or egg bites or what have you and can be made with your own choice of ingredients. Meat, no meat, cheese, no cheese, etc.

Equipment

  • Oven.

Ingredients

  • 9 eggs (or equivalent of egg whites)
  • 2 tablespoons water
  • ¼ cup diced onions
  • ¼ cup diced red pepper
  • 2 tablespoons diced spicy pepper (optional)
  • ½ cup spinach, shredded (not frozen)
  • ½ cup diced ham (or bacon or sausage) (optional)
  • cup shredded cheese (or crumbled feta)
  • 2 tablespoons diced tomatoes
  • ¼ teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon dried cilantro
  • ½ teaspoon crushed red pepper flakes

Instructions

  • Place oven racks at the top two positions
  • Put a sheet pan of water or ice on the 2nd from top position, this is to create steam.
  • In a large bowl mix the eggs then add the water, then add the rest of the ingredients and mix well. AS NOTED: My ingredients may not be your ingredients. Make these your own.
  • Let set and meld for 10 minutes while the oven heats.
  • Heat oven to 350°F (175°C)
  • If using a 12-spot muffin tin, spray liberally with cooking spray. If using silicon free-standing muffin cups (see picture), just use.
  • Pour the mixture into each muffin spot evenly. They should fill each spot about ½-⅔ of the way up, and that's fine -- these will expand when baking.
  • Bake on the top rack (above the steam rack) for 10 minutes. Then rotate and cook another 8-10 minutes. If not set after 20 minutes, cook an additional 3 minutes. They should be at least 150°F in the middle.
  • Remove from the oven and enjoy or freeze.

Notes

  • Other ingredient ideas: rice, oatmeal, broccoli (gag), beans, diced asparagus, chunky salsa, thin salsa, hot sauce.
  • These can be frozen.  Microwave from frozen on half power for 2-3 minutes for four of them -- you'll have to figure this out for yourself and your microwave.  Also want to investigate using the air fryer.
