Ponzu Sauce
A citrusy, salty, acid -- great as a marinade or a dipping sauce.
- 227 grams soy sauce, reduced sodium if you'd like (1 cup)
- 1 large orange zested and juiced (~6 tablespoons orange juice)
- 2 lemons zested, then juiced
- 100 grams Mirin (~6 tablespoons)
- ΒΌ teaspoon red pepper flakes (or more for a bit more kick)
- 40 grams bonito flakes (~1/4 cup)
- 1 piece kombu (dried kelp)
Mix all ingredients together in a bowl with a cover.
Let sit in the refrigerator overnight.
Strain out the solid bits and keep the liquid. Keep refrigerated.
