Potato Bread

Ingredients

  • 355 grams warm water (1½ cups)
  • 14 grams yeast (4½ teaspoons or 2 packages)
  • 213 grams mashed potatoes (1 cup)
  • 24 grams granulated sugar (2 tablespoons)
  • 25 grams olive oil or melted, cooled butter (2 tablespoons)
  • 720 grams all-purpose or bread flour (6 cups)
  • 15 grams salt (2½ teaspoons)

Instructions

  • If using active (not instant) yeast, put the yeast in the warm water and let sit for 10-15 minutes to become bubbly. If using instant yeast just add to the water and continue.
  • Stir in potatoes, sugar, oil (or butter) and salt. Mix well.
  • Mix in flour to make a soft -- not sticky -- dough. Knead for 5-8 minutes.
  • Place in a lightly oiled bowl, cover, and let rise for 1 hour or until doubled.
  • Punch down, divide in half, and form into logs.
  • Place in loaf pans, cover with oiled plastic wrap, and let rise in a warm place until doubled, 45-60 minutes.
  • Heat oven to 350°F
  • Bake 35-40 minutes or until lightly browned. Let rest in pan for 5-10 minutes before removing to a wire rack to cool completely.
