Preheat oven to 375℉ / 190℃.
Line at least two baking sheets with parchment paper or spray well with cooking spray.
Mix the AP flour (360g), the baking soda (½ tsp), baking powder (1 tsp), and salt (½ tsp) in a bowl and whisk to combine.
In the bowl of a stand mixer, cream together the butter and sugar until fluffy, 2-3 minutes.
With the mixer running on low, add the egg and combine. Add the vanilla (1 tsp), lemon juice (2 tablespoons), and lemon zest (1 tablespoon), and mix well.
With the mixer running on low-ish, add the dry ingredients (flour, etc.) like a half cup at a time until all added and no streaks of flour are visible.
Scrape down the sides.
Scoop 1 tablespoon of dough at a time and place on the parchment-prepared baking sheets. Don't crowd as these will spread. I got 12 per sheet -- 4 rows of 3 each.
Bake for 10-12 minutes, turning and swapping racks around as necessary. (Look, you know your oven and how it behaves and should know by now if you need to turn them around or swap the baking sheet on the top rack with the one on the bottom, etc.) When done the edges should be set and just beginning to brown with the middle a bit squidgy.
Let sit on the cookie sheet for four to five minutes to finish baking before removing to a cooling rack. Let cool completely before icing/glazing.
