Heat your oven to 350℉ / 175℃
In a bowl combine the oat flour (104g) and egg. It'll probably be pretty stiff. Add the applesauce a tablespoon at a time until a workable but not sloppy dough forms
Add the parsley and mint and mix until well distributed.
If the dough is crumbly, add a little more applesauce. If it's slop, add flour a tablespoon at a time.
On a lightly floured surface, roll out to ¼" thickness.
Using a cookie cutter for shapes or just a bench knife, cut to desired size and distribute on a parchment-lined baking sheet.
Bake for 10-12 minutes. Edges should be a bit golden and middles set.
Remove from oven and let cool completely on a wire rack.
