Grandma’s Coffee Cake

Pretty damn good.

Coffee Cake

I’ve excluded the racism and homophobia and intolerance my grandmother included. And I honestly think she added crack or something.

Ingredients

Cake Batter

  • 1 cup sugar
  • ½ cup butter, softened (Grandma was a big fan of shortening, so it may have been that a lot of the time.)
  • 2 eggs
  • 240 grams all purpose flour (2 cups)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon sea salt
  • 1 teaspoon vanilla
  • 1 cup sour cream (or a bit more)
  • 2-4 tablespoons milk

Topping

  • ½ cup packed brown sugar
  • 1 teaspoon cinnamon
  • 2-3 tablespoons melted butter

Instructions

  • Grease 9″ x 13″ glass baking dish
  • Preheat oven to 350°F
  • Cream sugar and butter until smooth.
  • Add eggs and beat in.
  • Add flour, soda, powder, and salt and mix well.
  • Add vanilla and sour cream and mix well.
  • DO NOT ADD MILK YET
  • In a small bowl, mix brown sugar, cinnamon, and butter with a fork.
  • Pour just enough batter (less than half) and spread to cover bottom of pan ¼” or so
  • Sprinkle half the brown sugar/cinnamon/butter mixture over the batter.
  • Add milk to the batter, thinning to an almost pourable consistency.
  • Pour remaining batter into the pan and spread gently to edges to not disturb filling too much.
  • Sprinkle top with remaining brown sugar/cinnamon/butter mixture.
  • Bake at 350°F for 30 minutes or until toothpick inserted comes out clean.

I’ve tried this.  My sister has tried this.  My father has tried this. We’re fairly certain my grandmother added crack cocaine to this recipe somewhere along the way. It’s good, but hers was better. Like sit down and can’t stop eating it better. Maybe it was the shortening instead of the butter. Maybe it was the spite and hate and anger. Who knows!?
