Pizza Sauce

Another work in progress. If I say I’m making my own cheese, send help…with a straight-jacket.
Pizza Sauce
This is a red sauce for pizza.
Servings: 4
Equipment
- Food processor
Ingredients
- 411 grams can of diced, roasted tomatoes, undrained (14½ ounce)
- 170 grams can of tomato paste (6 ounce)
- 13 grams olive oil (optional: garlic infused) (1 tablespoon)
- 1 teaspoon dried basil
- 1 clove garlic, peeled and smashed a bit (1? Really?)
- 1 teaspoon fine sea salt
- ½ teaspoon dried oregano
- ½ teaspoon crushed red pepper flakes (optional: Calabrian Pepper Flakes)
- freshly ground black pepper
Instructions
- Add all ingredients to food processor. Pulse until smooth.
- Use immediately. See notes.
Notes
- If you have the time, putting this into a small saucepan and simmering for 30-40 minutes will really develop the flavor more. Let cool most of the way before using on a pizza.
- The basil, garlic, oregano, chili flakes, and black pepper amounts are just a suggestion as these are up to taste.
- Figure using about ½ cup for a 10-12 inch pizza.
- I freeze excess in a zipper-type freezer bag in 1 cup portions. And then I try to remember to label it properly because no matter how many times I think, “I’ll remember what’s in here,” I don’t.
