Festive Holiday Salad

A bright holiday salad

Equipment

  • Mandoline (optional, but makes life so much easier)

Ingredients

  • 5 ounces arugula, rinsed and chopped
  • ¾ cup fennel, shaved thin
  • ½ cup red onion, shaved thin
  • ½ cup pomegranate seeds
  • ½ cup walnuts, chopped
  • ½ cup granny smith apple, cored and shaved thin
  • 1-2 mandarin oranges, peeled and segmented

Instructions

  • Mix all ingredients together and toss.
  • Serve with Citrus Vinaigrette
