Lemon Cake

					Still trying to use up the lemons my neighbor gave me. Added problem: Neighbor said a lemon cake had to have chia seeds to be like a certain coffee place. So I had to buy chia seeds for this one and now I have a lot of those to use up, too.
Lemon Cake
There's no way to pretend this is bread.

Ingredients
Da Cake
- 140 grams plain Greek yogurt (½ cup)
 - 21 grams chia seeds (optional, see notes) (2 tablespoons)
 - 30 grams lemon juice (2 tablespoons)
 - 2 teaspoons lemon zest (½ lemon)
 - 120 grams all purpose flour (1 cup)
 - 120 grams white whole wheat flour (1 cup)
 - 5 grams baking soda (1 teaspoon)
 - 3 grams fine sea salt (½ teaspoon)
 - 106 grams olive oil (½ cup)
 - 200 grams granulated sugar (1 cup)
 - 2 grams vanilla extract (½ teaspoon)
 - 3 large eggs
 
Da Glaze
- 113 grams powdered sugar (1 cup)
 - 30 grams lemon juice (2 tablespoons)
 - ½ teaspoon lemon zest
 
Instructions
Da Cake
- Preheat the oven to 350°F (177ºC).
 - Grease a 9-by-5-inch loaf pan with nonstick cooking spray or olive oil. Or line with parchment paper.
 - In a small bowl, whisk together the yogurt (140 grams), lemon juice (30 grams), lemon zest (2 tsp), and — if using — the chia seeds.
 - In another bowl (just to make sure we dirty everything), whisk together the flours (120 grams AP, 120 grams WW), the salt (3g) and the baking soda (5g).
 - In a stand mixer, add the sugar (200 grams) and olive oil (106 grams). Using the paddle, mix on high until well mixed.
 - Add the vanilla (½ teaspoon) and mix welll.
 - Add eggs (3) one at a time.
 - Reduce the mixer to medium-low and alternate adding the flour and the yogurt a heaping spoon at a time until all added and incorporated.
 - Pour/scrape the batter into the prepared loaf pan.
 - Bake in the middle rack for 30 minutes and then check to see if the top is browning too much. If it is, tent loosely with foil.
 - Bake another 15-20 minutes until a toothpick comes out clean. Internal temperature should be 205-210°F (96-99ºC).
 - Cool in pan for around 10 minutes before removing from pan and cooling completely on a wire rack.
 
Da Glaze
- Mix the powdered sugar (113 grams) with lemon juice (30 grams) and zest (½ teaspoon). Consistency should be like white glue.
 - Add to a sandwich bag, cut off a corner, and drizzle over the cake.
 
Notes
- Can use poppy seeds, too. Or a mix of poppy and chia. Or neither.
 - Make your own mix of flours as needed. Might be able to make with gluten free but I haven’t tried.
