Thai Chicken Pasta Salad

Semi-spicy (up to you) pasta salad that is great on its own or as a side.
Thai Chicken Pasta Salad
Servings: 6
Ingredients
Salad
- 16 ounces spaghetti or Vermicelli
- 2 chicken breasts, boned and skinned
- 2 large red bell peppers, cored and sliced into 1" x ¼" pieces
- 1 bunch green onions, chopped
- ½ cup cilantro, chopped
Dressing
- ½ cup chunky peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon hot chili sauce (or more to taste)
- 1 teaspoon dark sesame oil
- 1 clove garlic, minced
Instructions
- Poach the chicken breasts in a small amount of water for about 20 minutes. Drain, cool, and cut into bite-sized pieces.
- Cook noodles as instructed. Drain, rinse, and cool.
- In a small bowl, mix together dressing ingredients with a whisk.
- In a large bowl combine all ingredients. Toss with dressing to coat.
