Okay, I’m kinda fixated on these little loaf pans I got and finding things to do with them. This is another one.
Coffee Cake Loaflets
Makes three small loaves. Or one big one.
Ingredients
Da Streusel
- 108 grams brown sugar (½ cup packed)
- 3 grams cinnamon (1 teaspoons)
- 2 grams salt (¼ teaspoon)
- 42 grams butter, melted (3 tablespoons)
Da Cake
- 150 grams all-purpose flour (1¼ cups)
- 4 grams baking powder (1 teaspoon)
- 2 grams salt (¼ teaspoon)
- 2 grams baking soda (¼ teaspoon)
- 113 grams butter, room temperature (½ cup)
- 149 grams granulated sugar (¾ cup)
- 2 eggs
- 7 grams vanilla extract (½ tablespoon)
- 115 grams sour cream (½ cup)
Icing
- 57 grams confectioner's sugar (½ cup)
- 39 grams maple syrup (2 tablespoons)
- 28 grams milk or half-and-half (2 tablespoons)
Instructions
The Prep
- Heat oven to 350℉ / 175℃
- Grease 3 small loaf pans or one 9"x5" pan. Flour if you'd like.
Da Streusel
- Mix the brown sugar, flour, cinnamon, salt, and butter with a dough knife or a fork until mixed. Butter chunks should be pea- or bb-sized. Set aside.
The Batter
- In a small bowl mix together the flour, salt, baking powder, and baking soda. Set aside.
- In a stand mixer (or just a bowl that you're gonna use with a hand mixer), add the butter and sugar. Cream until fluffy, 2-3 minutes. Add the eggs one at a time. Add the vanilla and the sour cream. Mix until combined.
- With the mixer on low, add the flour mixture a large spoonful at a time until incorporated.
Assembly
- Add a layer of the batter to the bottom of the pans. You want to use like 1/6th of it. Or half if you're doing just one loaf pan.
- Add a hefty amount of the streusel.
- Add the rest of the batter to the top and spread evenly.
- Sprinkle generously with the streusel.
Baking
- Bake for ~30 minutes for small loaves or ~50 minutes for one large loaf.
- Remove and cool before running a knife around the edge to release from pans.
Icing
- Once cakes are cooled completely, mix the icing ingredients together to form a drizzleable consistency. Add a little more milk to thin — literally a drop at a time — or sugar to thicken. Drizzle on and let set before serving.

Notes
- Some people add nuts — chopped pecans or walnuts — to the topping/vein, and while I like pecans and walnuts, I like them not in my food. Use maybe 1/2 cup of either if you want to ruin this cake.
