Thai Chicken Pasta Salad

Semi-spicy (up to you) pasta salad that is great on its own or as a side.

Thai Chicken Pasta Salad

Ingredients

Salad

  • 16 ounces spaghetti or Vermicelli
  • 2 chicken breasts, boned and skinned
  • 2 large red bell peppers, cored and sliced into 1" x ¼" pieces
  • 1 bunch green onions, chopped
  • ½ cup cilantro, chopped

Dressing

  • ½ cup chunky peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 teaspoon hot chili sauce (or more to taste)
  • 1 teaspoon dark sesame oil
  • 1 clove garlic, minced

Instructions

  • Poach the chicken breasts in a small amount of water for about 20 minutes. Drain, cool, and cut into bite-sized pieces.
  • Cook noodles as instructed. Drain, rinse, and cool.
  • In a small bowl, mix together dressing ingredients with a whisk.
  • In a large bowl combine all ingredients. Toss with dressing to coat.
