Lemon Bars

Someone gave us a lot of lemons. We adapted.

Lemon Bars

Tart and sweet

Ingredients

Crust

  • ½ cup butter, salted, room temperature
  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ½ teaspoon vanilla
  • ¼ teaspoon salt

Filling

  • 1 cup granulated sugar
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 large eggs
  • 1 large egg yolk
  • 2 tablespoons all-purpose flour
  • powdered sugar

Instructions

Prep

  • Preheat oven to 350°F
  • Spray an 8" x 8" or 9" x 9" baking dish with cooking spray.

Shortbread Crust

  • Mix flour, butter, powdered sugar, and vanilla together until a cohesive, slightly crumbly dough forms.
  • Press dough evenly into the prepared pan. Prick all over with a fork. Bake 12-15 minutes or until edges are just getting brown.

Filling

  • Whisk together eggs and egg yolk. Whisk in sugar and flour. Add lemon juice and lemon zest. Whisk vigorously for 2-3 minutes.
  • Pour over the hot crust just after baking.
  • Bake 20-25 minutes or until set and the top has a white, sugary crust.
  • Cool completely before cutting.
  • Dust top with powdered sugar.
  • Cut into 16 "bars."

Notes

To cut, dip a sharp knife into very hot water and run around the edge.
