Someone gave us a lot of lemons. We adapted.
Lemon Bars
Tart and sweet
Ingredients
Crust
- ½ cup butter, salted, room temperature
- 1 cup all-purpose flour
- ¼ cup powdered sugar
- ½ teaspoon vanilla
- ¼ teaspoon salt
Filling
- 1 cup granulated sugar
- ¼ cup fresh lemon juice
- 1 tablespoon lemon zest
- 2 large eggs
- 1 large egg yolk
- 2 tablespoons all-purpose flour
- powdered sugar
Instructions
Prep
- Preheat oven to 350°F
- Spray an 8" x 8" or 9" x 9" baking dish with cooking spray.
Shortbread Crust
- Mix flour, butter, powdered sugar, and vanilla together until a cohesive, slightly crumbly dough forms.
- Press dough evenly into the prepared pan. Prick all over with a fork. Bake 12-15 minutes or until edges are just getting brown.
Filling
- Whisk together eggs and egg yolk. Whisk in sugar and flour. Add lemon juice and lemon zest. Whisk vigorously for 2-3 minutes.
- Pour over the hot crust just after baking.
- Bake 20-25 minutes or until set and the top has a white, sugary crust.
- Cool completely before cutting.
- Dust top with powdered sugar.
- Cut into 16 "bars."
Notes
To cut, dip a sharp knife into very hot water and run around the edge.
