Making a Backup of your Starter

Shit happens.
You don’t mean to kill your starter, but shit happens. So be prepared.
Drying Out Your Starter
I’m sure there are lots of ways to do this but my method is to take a bit of parchment paper and a pastry brush, brush a little starter on the paper, and wait until it dries out and can be flaked off the paper. You can put it in the oven with the light on to do it faster, too, I guess, but I live in a blast furnace of a climate, so….
I usually do this a couple of times — or do a larger piece of parchment paper — until I have 20 – 30 grams of desiccated starter. Then I store it somewhere in a plastic baggie.
