Banana Bread

Who doesn’t love banana bread? Er…well…who doesn’t love a way to get rid of those bananas that have gotten to the point where most are scared to eat them?
Banana Bread
A good way to use up those bananas that you forgot about.
Servings: 1 loaf
Equipment
- 1 9" x 5" loaf pan
Ingredients
- 113 grams unsalted butter, softened (1 stick, ½ cup)
- 3 large ripe bananas
- 2 large eggs
- 1 teaspoon vanilla extract
- 245 grams all purpose flour
- 200 grams granulated sugar (1 cup)
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon cinnamon
Instructions
- Preheat oven to 350°F.
- Spray loaf pan with cooking spray and set aside
- In the bowl of a stand mixer or a large bowl add the butter and bananas and mix/mash until smooth.
- Add the eggs and vanilla and incorporate.
- In another bowl, add flour, sugar, soda, salt and cinnamon and mix to combine.
- With mixer running add the dry mixture to the wet mixture a large spoon at a time until all added and incorporated.
- Pour batter into prepared loaf pan.
- Bake for 40-55 minutes until a toothpick inserted in the middle comes out clean.
Notes
You could add 170 grams (1 cup) of chocolate chips to this. Or add some and sprinkle the rest on top before baking. Just saying.
