Garlic Butter Tilapia

Because the site I found something like this this on has so much blather it was impossible to use. And mine is better.

Garlic Butter Tilapia

A tangy, rich garlicky fish

Ingredients

  • 4 tilapia loins or fillets, thawed
  • 4 tablespoons butter, melted
  • 2 tablespoons lemon juice
  • zest of one lemon
  • 4 cloves garlic, minced
  • ½ teaspoon dried dill
  • 3 tablespoons capers
  • kosher salt
  • freshly-ground black pepper
  • paprika, regular or smoked

Instructions

  • Preheat oven to 350℉ / 180℃
  • Lightly oil a baking dish
  • Liberally season the tilapia on both sides with salt, pepper, and paprika
  • In a measuring cup, melt the butter. Add the lemon juice, lemon zest, garlic, dill, and capers. Using a fork, mash the capers lightly to make them less round so they won't roll off the fish so easily. Mix well.
  • Pour over the tilapia, using the fork or a pastry brush to keep the capers and garlic on top of the fish.
  • Bake for 10 minutes.
  • Switch to 350℉ / 180℃ broil and broil for 5 minutes.
  • Remove from oven and check internal temperature. Should be 145℉ / 62℃. If not, bake for another few minutes until that temperature.
  • Serve with lemon wedges. And maybe rice.
