Garlic Butter Tilapia
A tangy, rich garlicky fish
Servings: 4
Ingredients
- 4 tilapia loins or fillets, thawed
 - 4 tablespoons butter, melted
 - 2 tablespoons lemon juice
 - zest of one lemon
 - 4 cloves garlic, minced
 - ½ teaspoon dried dill
 - 3 tablespoons capers
 - kosher salt
 - freshly-ground black pepper
 - paprika, regular or smoked

Instructions
- Preheat oven to 350℉ / 180℃
 - Lightly oil a baking dish
 - Liberally season the tilapia on both sides with salt, pepper, and paprika
 - In a measuring cup, melt the butter. Add the lemon juice, lemon zest, garlic, dill, and capers. Using a fork, mash the capers lightly to make them less round so they won't roll off the fish so easily. Mix well.
 - Pour over the tilapia, using the fork or a pastry brush to keep the capers and garlic on top of the fish.
 - Bake for 10 minutes.
 - Switch to 350℉ / 180℃ broil and broil for 5 minutes.
 - Remove from oven and check internal temperature. Should be 145℉ / 62℃. If not, bake for another few minutes until that temperature.
 - Serve with lemon wedges. And maybe rice.
