Ponzu Sauce

After finding a recipe on a completely unusable site — thanks to a million ads and a lot of bullshit — I tried it and didn’t like it. So I tweaked things a bit and made it my own.

Ponzu Sauce

A citrusy, salty, acid — great as a marinade or a dipping sauce.

Ingredients

  • 227 grams soy sauce, reduced sodium if you'd like (1 cup)
  • 1 large orange zested and juiced (~6 tablespoons orange juice)
  • 2 lemons zested, then juiced
  • 100 grams Mirin (~6 tablespoons)
  • ¼ teaspoon red pepper flakes (or more for a bit more kick)
  • 40 grams bonito flakes (~1/4 cup)
  • 1 piece kombu (dried kelp)

Instructions

  • Mix all ingredients together in a bowl with a cover.
  • Let sit in the refrigerator overnight.
  • Strain out the solid bits and keep the liquid. Keep refrigerated.
