Bacon Cheese Dog Biscuits

					Started as something else on a really annoying site. And a bad recipe. Much better. Hell, I’d eat these.
Bacon Cheese Dog Biscuits
Servings: 50 small biscuits
Equipment
- Stand mixer
 - Dog Biscuit Cookie Cutters (

Ingredients
- 2 tablespoons crumbled bacon (~2 strips)
 - 30 grams shredded cheese (¼ cup)
 - 1 large egg
 - 61 grams oatmeal flour (¾ cup)
 - ⅛ teaspoon salt
 - cool water
 - all-purpose or whole wheat flour
 
Instructions
- In the bowl of a stand mixer mix the bacon and cheese. Add the egg and mix on low just until incorporated.
 - Add the flour and mix until all together and a cohesive, sticky dough. IF it's too dry, add water a teaspoon at a time until you get a good dough.
 - Preheat oven to 350℉ / 175℃
 - Liberally flour a working surface with all-purpose or whole wheat flour. Flatten the batter to ¼-inch thick and cut into desire shapes, gathering scraps and re-flattening the dough as needed. Arrange biscuits on a parchment-lined baking sheet. Depending on which size cookie cutter you use, should be able to get 30-50 biscuits.
 - Bake for 20 minutes, turning half-way through. Should be kinda pale as oat flour isn't a real browning kinda flour.
 - Remove to a cooling rack and cool completely.
 
Notes
- You can either make bacon or just buy real bacon bits — not the fake stuff. I use the real, prepared bacon bits all the time as they’re leaner, more bacony, and easier to work with.
 - This recipe can be doubled but you’ll probably need more than one sheet pan.
 - I use a finely shredded cheddar but I’m not sure the type of cheese matters so much.
