Moretum Cheese Spread

I read about this herbed cheese spread and thought, “I like garlic. I like herbs.” So…

If you look online at 10 sites that have recipes for this, you’ll fine ten different recipes. I’m sure 80% of them claim to be authentic. Whatever. This is mine.

Moretum

A garlicky, herby, cheese spread.

Equipment

  • Food processor You can do this with a mortar and pestle, but good luck.

Ingredients

  • 1 head garlic, cloves removed and peeled (or more)
  • 1 bunch Italian parsley
  • 1 bunch cilantro, leaves
  • 2 teaspoons dried oregano
  • teaspoons salt
  • 1 tablespoon dried basil (or 4-5 good sized leaves of fresh)
  • 12 ounces white, soft cheese (ricotta, sheep's, cotija — feta might be interesting)
  • 1 tablespoon olive oil
  • 1 tablespoon white wine vinegar

Instructions

  • Try to get rid of the big stems and stick with mostly the leaves of the parsley and cilantro — I just find that the thicker stems tend to be bitter where the smaller ones near the leaves are tastier.
  • Rough chop the garlic and herbs and add to a food processor. Add the salt. Blend until finely chopped.
  • Add the dried herbs and cheese (in the comments let me know what cheese you used) and pulse until well-blended and smooth. Add the olive oil and vinegar and blend.
  • Taste and adjust seasoning.
  • Serve with bread. Don't plan on being around anyone for awhile.
