Vanilla Pound Cake

Wow people with cooking websites love to blather on about unrelated shit.

I always find pound cake too big. So this I wrote for working in my loaflet pans.

Vanilla Pound Cake Loaflets

Smaller pound cakes. No judgment.

Equipment

  • Stand mixer or hand mixer.

Ingredients

  • 240 grams all-purpose flour (2 cups)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 170 grams unsalted butter, room temperature (12 tablespoons / 1.5 sticks)
  • 198 grams granulated sugar (1 cup)
  • 1 tablespoon vanilla
  • 4 large eggs
  • 57 grams milk (¼ cup) (see notes)

Instructions

  • Preheat oven to 350℉ (175℃)
  • Grease and flour 3 loaflet pans. Or one one-pound loaf pan if you'd like.
  • In a bowl mix together the flour, salt, and baking powder. Set aside.
  • To your mixer bowl add the butter and sugar and, once mixed, beat on high speed until fluffy, 2-3 minutes.
  • On medium speed, add the vanilla and then add one egg at a time until all added and incorporated. Then add the milk. Mix until fully combined.
  • Add in the flour mixture half a cup at a time on low, increasing to medium for a minute after all has been added and mixed.
  • Scrape down the sides of the bowl and distribute evenly among your three prepared loaflet pans.
  • Bake for 30 minutes, rotating half-way through. Check that a toothpick comes out clean. Bake another few minutes if it doesn't.

Notes

  • We never have milk around, so I pretty much always use half-and-half or heavy cream when a recipe calls for milk.  I recommend it.
