Cranberry Salsa

					Adaptable and easily tweakable to be made your own. I lean more savory. Some like it sweeter.
These will go great with Wonton Cups to serve.
Cranberry Salsa
Something different for Thanksgiving.
Servings: 4 cups
Equipment
- Food processor (makes things much easier)
 
Ingredients
- 12 ounces fresh cranberries (1 bag)
 - 2-4 tablespoons agave nectar or maple syrup
 - ½ small red onion, finely chopped (½ cup?)
 - 1-2 jalapeno peppers, seeded and diced
 - 1 cup cilantro leaves, finely chopped (1 bunch)
 - 1-3 garlic cloves, finely chopped
 - 1 lime, juiced
 - ½ teaspoon salt
 - 1 cup beets, cooked, cooled, and finely chopped (optional…ick)
 
Serving
- crackers or won ton cups
 - fresh ricotta or other soft cheese
 
Instructions
- Put the cranberries in a food processor with the agave or syrup and pulse until the cranberries are finely chopped.
 - Transfer to a bowl and add the remaining ingredients. Mix well and season to taste.
 - Chill at least 30 minutes
 - Add cheese of choice to cracker or won ton cup. Top with salsa.
 
Update: I can’t say this is worth it. We’ve tried it with different cheeses, tried upping the heat, tried upping the acid. Just…meh.
