Soft Lemon Cookies

A neighbor said, “Want some lemons.” They gave us a sack of like 15. Now I’m trying to figure out things to do besides the Lemon Bars. Found this somewhere else but it was annoying and ad-laden and not lemony enough.

Ingredients

Da Cookies

  • 360 grams all purpose flour (3 cups)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 226 grams unsalted butter, softened (1 cup, 2 sticks)
  • 250 grams granulated sugar (1¼ cups)
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest

Da Glaze

  • 228 grams powdered sugar (2 cups)
  • 3-4 tablespoons lemon juice (about 1 lemon's worth)
  • 2 teaspoons lemon zest
  • ½ teaspoon vanilla extract

Instructions

Da Cookies

  • Preheat oven to 375℉ / 190℃.
  • Line at least two baking sheets with parchment paper or spray well with cooking spray.
  • Mix the AP flour (360g), the baking soda (½ tsp), baking powder (1 tsp), and salt (½ tsp) in a bowl and whisk to combine.
  • In the bowl of a stand mixer, cream together the butter and sugar until fluffy, 2-3 minutes.
  • With the mixer running on low, add the egg and combine. Add the vanilla (1 tsp), lemon juice (2 tablespoons), and lemon zest (1 tablespoon), and mix well.
  • With the mixer running on low-ish, add the dry ingredients (flour, etc.) like a half cup at a time until all added and no streaks of flour are visible.
  • Scrape down the sides.
  • Scoop 1 tablespoon of dough at a time and place on the parchment-prepared baking sheets. Don't crowd as these will spread. I got 12 per sheet — 4 rows of 3 each.
  • Bake for 10-12 minutes, turning and swapping racks around as necessary. (Look, you know your oven and how it behaves and should know by now if you need to turn them around or swap the baking sheet on the top rack with the one on the bottom, etc.) When done the edges should be set and just beginning to brown with the middle a bit squidgy.
  • Let sit on the cookie sheet for four to five minutes to finish baking before removing to a cooling rack. Let cool completely before icing/glazing.

Da Glaze

  • In a small bowl mix together the powdered sugar (228 grams), the lemon juice (3-4 tablespoons, the zest (~2 teaspoons), and vanilla extract (~½ teaspoon) until an icing is formed. Taste and adjust the amount of lemon juice as needed.
  • Either spread on the cooled cookies with an offset spatula or pipe. I suck at decorating, so I piped, badly. Tasted good, looked not so much.
  • Let set before serving.
