Cottage Cheese “Bagels”

Another instance of me putting something on my site because the site I found it on was so ad-laden as to be unusable.

I haven’t actually made these yet but have all the ingredients so will tomorrow.

Yes: you can make your own self-rising flour easily.

Cottage Cheese Bagels

Saw this on IG. Then again on IG even more vaguely. Then on a site that was unusable. Those people suck.

  • Stand mixer

Ingredients

  • 225 grams full-fat cottage cheese (1 cup)
  • 120 grams self-rising flour (113g AP, 6g Baking Powder, 1g sea salt)
  • 1 egg, beaten (optional)
  • Toppings (optional)

Instructions

  • Blend the cottage cheese (225g) in a blender or food processor until smooth.
  • In a stand mixer with the dough hook, mix the cottage cheese and the self-rising flour (120g) for 5 minutes. Let rest for 5 minutes, then mix for another five minutes.
  • Pour out onto a floured surface and let rest 5 minutes.
  • Flour your hand and divide into 4 equal portions. Should be ~86 grams each.
  • Roll each into a ball then poke a hole in the center and flatten to make a bagel shape.
  • Place on a parchment-lined baking sheet.
  • Let rest 10 minutes. While resting, preheat oven to 375℉.
  • If you'd like, beat the egg and brush each 'bagel' with the egg.
  • Top with toppings (everything bagel seasoning, dried onion, chili flakes).
  • Bake for 25-28 minutes until golden.
  • Let rest at least 10 minutes.
  • Enjoy the fact that you could read this recipe without 14 ads clogging up the whole screen.
